cups low-sodium chicken broth (I use one carton, one can and
one-fourth cup water)

Procedure
• Heat
the olive oil in a big pot over medium-high heat.
• Add
carrots, onions and celery then sauté everything for 6 minutes.
Then, add garlic and sauté it for one more minute.
• Stir
the cabbage, tomatoes, bell pepper, broth, green beans with salt and
pepper
• Then
boil
the mixture and cover and simmer with medium-low heat for about 15
minutes.
• Stir
thoroughly and serve it warm.
Note: You can also add one or two tablespoon of lemon juice if you wish, to add an extra flavor to the soup.
